Call it a snack or a full meal, PavBhaji is everyone's favorite. Made with easily available vegetables, anywhere in the world.
Ingredients:
- Cauliflower: 250 gm
- Onions: 4
- Tomato: 1
- Potatoes: 3 or 4
- Red capsicum: 1
- Green peas: 100 gm
- Ginger: 1inch
- Garlic cloves: 3 or 4
- Coriander- 1 small bunch
- Kasuri Methi : 1 teaspoon
- Everest Pavbhaji masala: 3 tablespoons
- Chili powder: 2 or 3 teaspoons
- Asafoetida - 1/2 teaspoon
- Turmeric powder - 1 teaspoon
- Salt: As per taste
- Oil - 3tablespoons
- Butter: 2 tablespoons and to toast bread
- Bread buns: 10
- Lemon: 1 teaspoon lemon juice and some slices.
Procedure:
- Boil potatoes.
- Cook cauliflower, capsicum and peas together.
- Cut onions.
- Wash and cut coriander.
- Make tomato, ginger and garlic paste together.
- Mash cooked potatoes.
- Blend cooked vegetables (You can use a blender)
- In the cooking-pan add oil and 1 tablespoon of butter.
- Once hot add asafoetida and turmeric powder.
- Add 3 cut onions and stir. Keep 1 cut onion aside for garnishing.
- Once onions are fried till translucent, add tomato-ginger-garlic paste, and fry for 3 to 4 minutes.
- Add pav bhaji masala, chili powder and salt. Mix and fry well.
- Add mashed potatoes, and mix well.
- Add blended vegetables and mix well.
- Add 1 tablespoon of butter, kasuri methi and one teaspoon lemon juice.
- Mix, cover and cook for 10 mins. Keep stirring intermittently.
- Toast bread buns using butter.
- Pavbhaji is ready.
- While serving garnish with onions, coriander, and a slice of lemon.
